Raisins are a great snack food that are rich in antioxidants and contain no cholesterol or fat! This is a flavorful way to plump up those raisins for a salad, dressing, and even on focaccia. Plan on some extra simmering time and you will be rewarded.
1 cup apple cider
3/4 cup cherry or pomegranate juice
3/4 cup red wine
1/4 cup olive oil
2 tablespoons butter
2 tablespoons balsamic vinegar
3 cups raisins
Pour each of the ingredients into a medium sized sauce pan. Simmer the raisins and liquid over low heat for at least 20 minutes. Stir occasionally. Raisins will absorb a lot of the liquid. The remaining liquid should be thicker and the raisins plump. For a salad dressing add more balsamic vinegar, olive oil, and salt to your taste. Then drizzle over your favorite greens. This salad has goat cheese, toasted pine nuts, spinach, and diced honey crisp apples. The raisin dressing on top adds a nice contrast of flavors, sweet, and savory.
